How a Brazilian Steakhouse Rodízio Works: The Green and Red Card

Rodízio is the Brazilian way of dining: one price, and gaucho chefs bring fire-roasted meat to your table until you tell them to stop. At a Brazilian steakhouse like Brasão, you control the pace with a small two-sided card. Flip it to green and the skewers keep coming; flip it to red when you need a breather. That is the whole system, and the rest of this guide explains how it plays out from the moment you sit down.

What does rodízio mean?

Rodízio is a Portuguese word for "rotation," and it describes a service style where food circulates through the dining room instead of being ordered one plate at a time. In a churrascaria, the traditional Brazilian steakhouse, that means gauchos moving from table to table with skewers of charcoal-grilled meat. At Brasão, every beef cut is 100% USDA Prime, seasoned with traditional rock salt and roasted over open charcoal.

How the green and red card works

At your table you have a card that is green on one side and red on the other. Green means "yes, please": gaucho chefs see it and come to carve at your command. Red means pause: the carving stops while you enjoy what is on your plate, visit the salad bar or simply catch your breath. Flip back to green whenever you are ready for more.

The card keeps the experience relaxed. Nobody has to flag down a server to slow things down. You decide when to go on and when to rest, and you can switch as many times as you like.

Start at the gourmet salad bar

Most guests begin at the 50+ item gourmet salad bar, which holds exotic and imported cheeses, cured meats, artisanal salads and traditional Brazilian delicacies. Hot Brazilian sides come straight to your table. It is a good way to settle in, and it balances the richness of the main event. If you prefer to skip the meat, the salad bar on its own is a great vegetarian option.

The 17 cuts, carved tableside

Then the gauchos arrive. The Brasão rodízio includes 17 cuts, and every one of them is part of the full experience. Beef is the heart of it, with our signature Picanha, Fraldinha, Ribeye and Filet Mignon, plus Alcatra with Cheese, Spicy Picanha, Garlic Picanha, Beef Ribs and Filet Mignon with Bacon. The rotation also includes Lamb Chops and Leg of Lamb, Pork Ribs and Sausage, Chicken Breast with Bacon and Chicken Legs, Grilled Shrimp, and Grilled Pineapple dusted in sugar and cinnamon.

Because the gauchos carve tableside, every slice comes the way you like it, as often as you like. Browse every cut on our menu to see what is coming.

What it costs, and what is extra

Brasão keeps pricing simple. The Full Experience at weekday lunch (Monday through Friday, 11 AM to 2 PM) is $54.95, and at dinner it is $69.95. It includes the USDA Prime cuts carved tableside, the 50+ item gourmet salad bar and hot Brazilian sides, as much as you like. The salad bar on its own is $31.95 at lunch and $46.95 at dinner. Children ages 7 to 11 are $27.95 at lunch and $35.95 at dinner, and children ages 3 to 6 are $10.95. Prices are before tax and gratuity, and drinks are not included.

If you want a lighter weekday lunch, Executive Lunch is $36.95 and features 8 signature cuts, the gourmet salad bar and hot sides. For a special occasion, Japanese Wagyu A5 (cooked on a salt rock at your table) and USDA Prime Rib are served à la carte alongside your rodízio. Prices can change and may vary on select holidays, so check the current pricing page before you book.

Tips for your first rodízio

Pace yourself, and use the red side of the card without guilt. Pick a few favorites and ask for them again. Try the Picanha at least once, since it is our signature cut. And if you are celebrating, our dining rooms are made for birthdays, date nights and team dinners, and we have private dining rooms for larger groups.
